Serves about 6 full-sized people!
6 Apples (it’s fun if you can get a mixed bunch with sweet and tart!)
⅓ Cup Plant-Based Butter (or butter of your choice)
3 TBSP All-Purpose Flour (GF Cup for Cup works here, tewww)
1 TSP Salt
½ Cup Brown Sugar
1 TSP Cinnamon
A Dash of Nutmeg
½ TSP of Grated or Ground Ginger
⅓ Cup Water or Apple Juice
The Juice of One Lemon
1 Cup Rolled Oats
1 Cup All-Purpose Flour (GF Cup for Cup, blagain if needed!)
½ Cup Plant-Base Butter or ¼ Cup Coconut Oil
½ Cup Roughly Chopped Walnuts (or any alternative)
1 Cup Brown Sugar
½ TSP Baking Powder
1 TSP Cinnamon
½ TSP Salt
OPTIONAL: Coconut Whipped Cream, Yogurt, Ice Cream (or topping of choice)
Preheat your oven to 350 degrees FH/ Gas Mark 4
While your oven preheats, grease a 9 x 13 baking pan or equivalent 3 Quart heat-resistant dish and set it aside.
Core and cut apples - either into small chunks or thin slices and set aside.
In a medium bowl, whisk the softened butter and flour together, then add in the water or apple juice, lemon juice, brown sugar, and spices until smooth.
Pour the apples into the batter and mix until combined. Then, pour the mixture into the greased pan.
For your topping, mix your additional sugar, spices, flour, with the baking powder and oats. Work the butter or oil through the mixture with your fingers until roughly and evenly combined. Might feel a bit sandy.
Then, spread the topping onto the batter mixture and pop in the oven!
Bake for about 50 minutes - until the apples are tender and the mixture is bubbling.
Once out of the oven, let the crisp rest for up to 20 minutes before serving with toppings and sides of your choice, or it’s great as-is!
