No Garden Pawrty ish compwete wifout a twaditional tea sandwich! My fwends at Veganuary sent dis dewicious weshipee for the fwesh and springy avo bland chickpea sawad sandwich. Pwease blenjoy and don’t fowget, pinkies up!


INGWEDIENTS

  • ½ avocado, destoned, peeled, sliced 

  • ½ cup cooked or canned chickpeas 

  • 2 TBSP chives, chopped 

  • 2 TSBP cilantro (coriander), and/or parsley, chopped 

  • 1 lemon, zested 

  • 2 TBSP fresh lemon juice 

  • Drizzle of Extra-virgin Olive Oil 

  • 2 slices of bread of choice 

  • Sandwich garnishes of choice
    (tomatoes, lettuce, spring greens, etc.) 

INSTWUCSHUNS

Prep Time: 10 minutes / Serves: 2

  1. Drain and rinse chickpeas, place in a mixing bowl.

  2. Use the back of a fork or a masher to mash chickpeas with avocado to desired consistency. 

  3. Add remaining ingredients and mix well.

  4. Add salt and pepper to taste.

  5. You are now ready to make your sandwich.

  6. Place lettuce or other garnishes onto a slice of bread and scoop a large serving of chickpea salad on top.

  7. Add tomatoes and any other desired ingredients and top with a second slice of bread.

  8. Cut on the diagonal for the perfect tea-time sandwich!
